It is inevitable. The health inspector will always show up, at the worst time and on the worst day. Most health inspectors are there to conduct their duty of ensuring food service establishments are serving safe food to their patrons, not to shut down an establishment. Here are a few tips:
Treat them with respect
Be prepared to follow the inspector and take notes
Answer all questions truthfully
Immediately correct violation when possible
Throughout the inspection, set the example for your team and follow proper food safety procedures
During the exit interview with the inspector, review the violations (be sure to bring up any violations corrected). This is also a great time to discuss how the remaining violations will be corrected, ask any last questions regarding the inspection, or any questions.
After the inspector leaves and a follow-up inspection is warranted, correct all violations before the inspector returns.
