How to Correct Violations After the Inspector Leaves

Last week's topic was on what to do during the health inspector arrives. This week let's look at what to do after the health inspector leaves.


After the nerves and emotions have calmed, it is time to review the list of violations the health inspector has left behind. The best health inspectors will typically discuss some recommendations how to correct the violations that were list. Implementing some of those recommendations the inspector discusses can correct the violation listed.


It is your responsibility as an operator to correct the violations as soon as noted, these are short term fixes. It is also your responsibility to put systems in place to reduce the chance of violations reoccurring, these are long term fixes. To achieve this you will need to determine the root cause for the violations. By determining the root cause, you address the underlying issues as to why the violation occurred and determine the best method to reduce the chance of the violation reoccurring.

You want to ask 3 questions:

  1. What happened?

  2. How it happened?

  3. Why is happened?

Keep asking why until the root cause is determined. Determining the underlying reason for a violation can help your establishment perform better during health inspections, protect your customers from food poisoning, and protect your brand.
